Stuffed Poblano Peppers

Ingredients:
- 2lbs ground beef
- 4 poblano peppers
- 2 tbsp taco seasoning
- 1/2 cup diced onion
- 2 cloves garlic
- 2 tbsp tomato paste
- Chopped onion
- Fresh cilantro
- Guacamole
TACO SEASONING MIX
- 1 tbsp chili powder
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- 1/2 tsp smoked paprika
- 1 1/2 tsp cumin
- 1/4 tsp red chili pepper flakes
- 1 tsp salt
- 1 tsp pepper
- Mix together all the spices and store in an airtight container.
Directions:
- Preheat oven to 425° F.
- Cook ground beef, taco seasoning, onion and garlic.
- Add tomato paste.
- Cut poblanos in half and remove seeds.
- Arrange peppers in a 9×13 dish.
- Stuff peppers.
- Add 2 tbsp of water to the bottom of your glass dish.
- Cover tightly with foil.
- Cook 20 minutes. Remove foil and cook 10 more minutes.
